These homemade peanut butter cups taste just like your favorite store-bought candy, but have only 3 simple ingredients. They are easy enough for even a kid to make!
Line 6 standard muffin cups with muffin liners, or lightly oil 6 muffin cups. Set aside.
Melt the chocolateMicrowave method: place chocolate chips in a microwave safe bowl. Microwave for 1 minute, remove and stir. Continue to microwave in 30 second increments, stirring in between, until completely melted and smooth. Do not overcook! Mine took 1 minute 30 seconds total.Stove top method: place chocolate in a small saucepan over medium-low heat. Stir continually until most of the chocolate is melted. Do not overcook! Remove from the stove and continue to stir until completely melted and smooth.
Scoop about a tablespoon of chocolate into the bottom of a muffin cup and spread to cover the bottom. Repeat with remaining muffin cups. There should be plenty of chocolate left over. This will be for the tops of the peanut butter cups. Set remaining melted chocolate aside. Place the muffin tin in the freezer for a few minutes to harden.
While the chocolate is chilling, mix the peanut butter and 1 tablespoon powdered sugar together to form a ball, adding a little more powdered sugar as necessary to reach desired consistency. If it becomes too stiff to stir, you can use (clean) hands to mix the peanut butter and powdered sugar together. You want to be able to roll the peanut butter into a ball between your palms.
Roll about a tablespoon of the peanut butter mixture between your palms into a ball and then flatten it into a disk shape. Place the peanut butter disk on top of the chilled chocolate, ensuring there is still a ring of chocolate showing around the edge. Repeat with remaining muffin cups.
Spoon the remaining melted chocolate evenly over the peanut butter in the muffin cups, making sure to spread it all the way to the edges. Place in the freezer for 5-10 minutes to harden up.

Notes
-If you don't have powdered sugar on hand, you can make your own! Add granulated sugar to a blender and blend for 30-60 seconds. Make sure to keep the lid on while you do this because it gets a little dusty! Done!-You could also do this in mini muffin tins, just reduce the amount of chocolate you put in the bottom and the peanut butter disks to a teaspoon. This will make about 14-16 mini-peanut butter cups.
