Each bite of cauliflower ceviche has just the right balance of bright flavors from cauliflower, tomato, red onion, and avocado. Just let raw cauliflower marinate in lime juice to make this easy vegan ceviche appetizer.
Before you start, prepare all of your ingredients. You want everything to be diced into small bite-sized pieces. The cauliflower can be a bit larger than the other ingredients, but still relatively small. Think of it being closer in size to cauliflower rice.
For an even faster prep time, add cauliflower florets to a food processor and pulse a few times.
Add 3 cups diced cauliflower, 1 cup diced tomatoes, ½ cup diced red onion, 1 diced jalapeño, ¼ cup lime juice, 2 diced avocados, and ½ cup chopped cilantro to a large bowl.
Mix to thoroughly coat all the vegan ceviche ingredients with lime juice.
Add 2 diced avocados and toss gently, taking care not to mash the avocado.
Cover and chill for at least 1 hour and up to 12 hours.
Serve with tortilla chips and enjoy!
