The best Air Fryer Cookie For One features a golden-brown, crispy exterior and a gooey center filled with chocolate chips. Inspired by the pizookie and thick Levain cookies, but without eggs!
Cream together 2 tablespoons vegan butter (softened), 2 tablespoons brown sugar, and 1 tablespoon white sugar with a spoon in a small bowl.
Add ½ teaspoon vanilla extract and 2 tablespoons soy milk to the butter and sugar mixture.
Add ½ cup all-purpose flour, 1 tablespoon cornstarch, ¼ teaspoon baking powder, 1 pinch sea salt, and ½ cups dairy-free chocolate chips to the wet ingredients. Mix to form a thick dough. The dough will start out crumbly, but continue mixing just until all of the flour is fully incorporated.
Form the cookie dough into a disk about 4.5" in diameter and place it on a reusable liner or piece of parchment paper inside the air fryer basket.
Air fry at 350°F for 10 to 12 minutes or until golden brown.

While the title says cookie for one, you could definitely share this with a friend. You could also portion the dough into 2 or 3 smaller cookies.
