    What to Expect:

    • a gooey yet crisp cookie filled with chocolate.
    • a big cookie... while this is a cookie for "one," it can definitely be shared between two people.
    • a quick and easy recipe that will be your new go to for single serving cookies!

    Ingredients

You will need these simple ingredients to make a single serving air fryer cookie:

Ingredients needed to make air fryer cookies: chocolate chips, vanilla, flour, butter, milk, cornstarch, white sugar, brown sugar, baking powder, and salt.
    • Vegan Butter is the essential base to make these cookies! Any brand works, I usually use the Country Crock olive oil butter.
    • Brown Sugar and White Sugar are combined for the perfect balance of a chewy and flavorful cookie.
    • Plant Milk replaces the egg and helps to form the cookie dough. Any kind works, I used unsweetened soy milk.
    • All-Purpose Flour and Cornstarch create a light cake flour feel reminiscent of those thick Levain cookies.
    • Chocolate Chips are everything in this cookie! I like to use an assortment of mini semi-sweet chocolate chips, large semi-sweet morsels, and dark chocolate chips. You could also chop up pieces of your favorite dark chocolate bar for even larger chunks of chocolatey goodness. I love a mix of the Enjoy Life and Trader Joe’s chips.
    • Vanilla Extract
    • Baking Powder

Please refer to the recipe card below for the full list of ingredients and detailed instructions.

    Cookie Variations

Here are some ideas for personalizing your single-serving cookies with different add-ins:

    • Nuts - Add walnuts for a rich, nutty flavor and satisfying crunch.
    • Dried Fruit - Introduce natural sweetness and chewiness with options like raisins or cranberries.
    • Seeds - Consider popped quinoa, sunflower, or pumpkin seeds for a nut-free crunch.
    • Coconut - Elevate your cookies with shredded or toasted coconut for a tropical touch.
    • Citrus Zest - Bring a refreshing twist with lemon, lime, or orange zest.

Feel free to mix and match; try toasted coconut with lime zest for a tropical feel, or combine chocolate chips with walnuts for a classic Levain cookie.

    Equipment

Parchment paper is essential to prevent sticking and ensure easy cleanup when making cookies in the air fryer.

Alternatively, you can use aluminum foil. Grease it beforehand to prevent sticking, and keep in mind the cookie may cook faster.

And, of course, the air fryer itself is key! It makes this recipe quick and easy, giving this cookie the perfect crispy golden brown exterior and gooey center.

I tested this recipe with the Cosori Air Fryer. This is a decent-sized air fryer, but a smaller one will also work since this recipe is for just one cookie about 4.5” in diameter.

    Directions with Pictures

Here’s a step-by-step guide to making the best air fryer cookie for one:

    Creaming together butter and sugars.
    1. Step 1: Cream the vegan butter and sugars together.
Mixing the entire dough with chocolate chips.
    1. Step 2: Add the remaining ingredients and mix to form a thick dough.

    1. Step 3: Form the cookie dough into a disk about 4.5" in diameter.

    1. Step 4: Air fry at 350°F for 10 to 12 minutes or until golden brown.

    Top Tips

Use softened butter for this cookie. Although it's possible to use butter straight from the fridge, doing so requires more effort and time to cream the butter and sugar together.

But whatever you do, don’t melt the butter in the microwave!

After combining the butter and sugar, incorporate all the other ingredients, including the chocolate. This ensures an even distribution of chips throughout the dough.

For best results, minimize opening the air fryer. I usually check after 10 minutes to see if it needs to bake for longer.

Once the air fryer cookie is done, the outside of the cookie will be golden and crispy, with fully cooked edges, while the center retains a slightly gooey, pizookie-like quality.

    Ways to Serve

Savor your air fryer chocolate chip cookie as it is, or explore these serving suggestions:

    • Ice Cream - Top your single-serve cookie with ice cream for a classic pizookie feel.
    • Berries - Fresh strawberries or blueberries are a great option to balance and lighten the richness of the cookie.
    • Whipped Cream - Opt for coconut whipped cream for a light and fluffy pairing to this thick air fryer cookie.
    • Glass of Milk - Dip your giant cookie or enjoy it alongside a glass of oat milk.

    Make Ahead Tips

Prepare this cookie dough in advance and store it in the fridge or freezer. It's perfect for those busy nights when you crave a sweet treat.

Shape the cookie dough into a disk before wrapping it in plastic and placing it in a freezer bag.

When you're ready for a treat, there's no need to thaw the dough – just pop it straight into the air fryer!

    Recipe FAQ

Can I bake air fryer cookies in a traditional oven?

Yes, the cooking time and temperature will vary slightly. Add a few minutes to the overall time. The oven temperature should also be adjusted to 375°F as air fryer chocolate chip cookies are baked at a lower temperature.

Can I make these into smaller cookies?

Yes! This cookie is somewhat large and could easily be split into 2 or 3 regular-sized cookies.

Use a cookie scoop to make smaller air fryer chocolate chip cookies. The cooking time will be slightly shorter, given the smaller surface area.

I’m currently working on a recipe for a full batch of these cookies, so check back soon!

Can I eat the chocolate chip cookie dough raw?

I do not recommend eating this cookie dough raw.

Even though there is no raw egg, there is still flour, which should be heat-treated before eating.

If you're looking for some cookie dough that is safe to eat raw, try chickpea cookie dough!

    Equipment

    • air fryer
    • parchment paper

    Ingredients

    • 2 tablespoon vegan butter
    • 2 tablespoon brown sugar packed
    • 1 tablespoon white sugar
    • ½ teaspoon vanilla extract
    • ⅛ cup plant milk oat milk, soy milk, almond milk
    • ½ cup all-purpose flour
    • 1 tablespoon cornstarch
    • ¼ teaspoon baking powder
    • a pinch of sea salt
    • ½ cups dairy-free chocolate chips can use a variety of dark and semi-sweet, see notes

    Instructions

    • Cream the softened vegan butter and sugars together with a spoon in a small bowl.
    • Add the remaining ingredients and mix to form a thick dough. The dough will start out crumbly, but continue mixing until the flour is fully incorporated with the butter and milk.
    • Form the cookie dough into a disk about 4.5" in diameter and place it on a small piece of parchment paper inside the air fryer basket.
    • Air fry at 350°F for 10 to 12 minutes or until golden brown.

    Notes

See more expert tips, pictures, and variations above for making the best air fryer cookie for one!
Yield: 1 air fryer cookie, about 4.5” in diameter
Butter Note: It’s easiest to cream the butter and sugar if it has sat out at room temperature for about 15 minutes. But I often find myself in a pinch for time and use butter straight out of the fridge. It just takes a bit of extra arm work. Whatever you do, don’t melt the butter in the microwave!
Parchment Paper: Cut out a sheet of parchment to about 7” by 7” so it's easy to grab onto the cookie to lift it in and out of the air fryer. You could also use an air fryer liner.
Make Ahead: Prepare the dough ahead of time. Then shape it into a disk, wrap it in plastic, and store it in a freezer bag. Store in the refrigerator or freezer. When you're ready for a treat, place the dough directly into the air fryer (no need to thaw).
Storing: If you have any cookie leftover, store it in an airtight container for 3 to 5 days.
To Preheat or Not? With the Cosori air fryer, I have never had to preheat before baking anything. If you know that your air fryer does not get up to heat very fast, preheat; otherwise, it's unnecessary.

Delicious! Just what I was looking for. I used coconut oil in place of the vegan butter and halved the recipe - portion control because if I made it all, I would eat it all.
