What to Expect:
- a gooey yet crisp cookie filled with chocolate.
- a big cookie... while this is a cookie for "one," it can definitely be shared between two people.
- a quick and easy recipe that will be your new go to for single serving cookies!
Ingredients
You will need these simple ingredients to make a single serving air fryer cookie:

Plant milk replaces the egg and helps to form the cookie dough. Any kind works, I used unsweetened soy milk. Oat milk or almond milk are both great options.
A combination of all-purpose flour and cornstarch creates a light cake flour feel reminiscent of thick Levain cookies. You could also use cake flour if you have it!
Chocolate chips are everything in this cookie! I like to use an assortment of mini semi-sweet chocolate chips, large semi-sweet morsels, and dark chocolate chips. You could also chop up pieces of your favorite dark chocolate bar for even larger chunks of chocolatey goodness.
You can have a lot of fun personalizing this recipe because it's single serving! Try other mix-ins like nuts, dried cranberries, or shredded coconut. My personal favorite combo is chocolate and walnuts (like in a classic Levain cookie).

Directions with Pictures
Here’s a step-by-step guide to making the best air fryer cookie for one:

- Cream softened room temperature vegan butter and sugars together.

- Add the remaining ingredients and mix to form a thick dough.

- Form the cookie dough into a disk. You don't want to flatten it too much because it isn't going to rise a lot.

- Air fry until the outside of the cookie is golden and crispy, with fully cooked edges. The center will still feel slightly gooey.
Ways to Serve
Top your single-serve cookie with a scoop of vegan vanilla ice cream and some strawberries or blueberries. I love adding fresh fruit to balance the richness of the cookie.
Opt for coconut whipped cream for a light and fluffy pairing to this thick air fryer cookie.

When you're ready for a treat, there's no need to thaw the dough. Just pop it straight into the air fryer and proceed with the directions as usual!
I do not recommend eating this cookie dough raw.
Even though there is no raw egg, there is still flour, which should be heat-treated before eating.
If you're looking for some cookie dough that is safe to eat raw, try chickpea cookie dough!

Delicious! Just what I was looking for. I used coconut oil in place of the vegan butter and halved the recipe - portion control because if I made it all, I would eat it all.
