- Sandwich Bread
- Tofu Mayo or store-bought vegan mayo
- Mushroom Bacon
- Bib Lettuce or romaine, green leaf
- Beefsteak Tomato
- Salt + Pepper

Prepare the Vegan Bacon
Make the best vegan bacon using pink oyster mushrooms:
- Shred the oyster mushroom into pieces.
- Mix mushroom with the smoky marinade.
- Pan fry the mushrooms on both sides until crispy.
- Let the mushroom cool and finish crisping up.
Assembling the Perfect BLT
Here’s how to assemble the best mushroom BLT sandwich (and in the correct order!)
- Toast bread with butter.
- Add a layer of tofu mayo to both pieces of bread.
- Lay down a handful of mushroom bacon.
- Layer a couple of large pieces of lettuce.
- Add the tomato slices on top.
- Season the tomato with salt and pepper.

Vegan BLT Sandwich with Mushroom Bacon
Ingredients
- 2 slices sandwich bread
- 2 tablespoons tofu mayo to spread over bread
- ¼ cup oyster mushroom bacon
- 3 large leaves bibb lettuce
- 2 slices beefsteak tomato cut ¼" thick
- sea salt + pepper to taste
Instructions
- Toast the sandwich bread with vegan butter or olive oil on the stovetop until golden brown.
- Spread an even layer of vegan mayo over both slices of bread.
- Add a layer of vegan bacon over the bottom piece of bread.
- Stack a couple of lettuce leaves on top.
- Add the beefsteak tomato slices on top.
- Lightly season the tomato with sea salt and black pepper.
- Add the top piece of bread, slice the sandwich in half, and enjoy!
Notes
- Bread - You can use whatever bread you have on hand. I kept it simple with presliced sandwich bread, but a fancier sourdough would be great. You can also use gluten-free bread if needed!
- Mayo - You can use store bought mayo or make tofu mayo at home!

- Lettuce - Use a large leafy green that can easily be layered like bibb lettuce, romaine lettuce, spinach, or arugula.
- Tomato - Beefsteak tomatoes are the best for this recipe. The big slices are classic for a BLT. Make sure you season the slices, though!
