    Vegan BLT Sandwich with Mushroom Bacon

    I love how crispy, smoky mushroom bacon complements this sandwich's fresh, juicy tomato slices and lettuce.

    What really elevates this sandwich to a completely different level is the homemade mayo.

    All in all, it’s such an easy but delicious sandwich, perfect for a simple summer lunch!

    Serve it with vegan coleslaw or sweet potato fries for a real treat.

    Ingredients

    The ingredients for a BLT are pretty straightforward, it's all in the name! Here's what you will need to make a vegan BLT:

    Ingredients with labels: mushroom bacon, tomato, bread, lettuce, mayo.
    • Sandwich Bread
    • Tofu Mayo or store-bought vegan mayo
    • Mushroom Bacon
    • Bib Lettuce or romaine, green leaf
    • Beefsteak Tomato
    • Salt + Pepper

    Prepare the Vegan Bacon

    Make the best vegan bacon using pink oyster mushrooms:

    Step by step guide to making mushroom bacon for the vegan BLT: shred the mushroom, mix it with marinade, pan fry it, and cool on a plate.
    1. Shred the oyster mushroom into pieces.
    2. Mix mushroom with the smoky marinade.
    3. Pan fry the mushrooms on both sides until crispy.
    4. Let the mushroom cool and finish crisping up. 

    Assembling the Perfect BLT

    Here’s how to assemble the best mushroom BLT sandwich (and in the correct order!)

    1. Toast bread with butter.
    2. Add a layer of tofu mayo to both pieces of bread.
    3. Lay down a handful of mushroom bacon.
    4. Layer a couple of large pieces of lettuce.
    5. Add the tomato slices on top.
    6. Season the tomato with salt and pepper.

    It’s that simple! But trust me, you don’t want to skip seasoning the tomato slices. It brings out so much flavor and takes this vegan BLT to the next level.

    Additions & Variaitons

    This recipe, as listed, is for a classic BLT, which is meant to let the tomato shine! But you can always doctor up your sandwich with more flavors and additions.

    • Add avocado
    • Use spinach or arugula
    • Add microgreens
    • Use spicy sriracha mayo or garlic aioli
    • Use fancier bread like sourdough

    Ingredients

    • 2 slices sandwich bread
    • 2 tablespoons tofu mayo to spread over bread
    • ¼ cup oyster mushroom bacon
    • 3 large leaves bibb lettuce
    • 2 slices beefsteak tomato cut ¼" thick
    • sea salt + pepper to taste

    Instructions

    • Toast the sandwich bread with vegan butter or olive oil on the stovetop until golden brown.
    • Spread an even layer of vegan mayo over both slices of bread.
    • Add a layer of vegan bacon over the bottom piece of bread.
    • Stack a couple of lettuce leaves on top.
    • Add the beefsteak tomato slices on top.
    • Lightly season the tomato with sea salt and black pepper.
    • Add the top piece of bread, slice the sandwich in half, and enjoy!

    Yield: 1 sandwich; you can scale the recipe to make as many sandwiches as you want!
    Ingredient Notes: 
    • Bread - You can use whatever bread you have on hand. I kept it simple with presliced sandwich bread, but a fancier sourdough would be great. You can also use gluten-free bread if needed!
    • Mayo - You can use store bought mayo or make tofu mayo at home!
    • Vegan Bacon - For more tips and ideas, Check out the post on making oyster mushroom bacon. You could also use tempeh bacon or tofu bacon in this recipe.
    • Lettuce - Use a large leafy green that can easily be layered like bibb lettuce, romaine lettuce, spinach, or arugula.
    • Tomato - Beefsteak tomatoes are the best for this recipe. The big slices are classic for a BLT. Make sure you season the slices, though!
    Storage: I do not recommend making BLTs ahead because you want a fresh slice of tomato and toasted bread! It is meant to be the star of the sandwich, so it needs to be cut fresh. Also, the sandwich would get soggy if made ahead. But you can prepare the mushroom bacon and reheat it in an air fryer to crisp it back up.
