Ingredients
You will need these simple ingredients to make vegan mayonnaise with tofu:
- Silken tofu, or soft tofu, has a smoother texture and lower water content. This creates a creamy, smooth, mayo-like consistency without any egg yolks. Firm tofu is grittier and will not work in this recipe; you will end up with tofu ricotta.
- Olive oil adds a richness to the mayo but can be omitted if you are oil-free. Canola oil will also work.
- A combination of lemon juice, apple cider vinegar, and Dijon mustard provides the acidity and tang you would expect from mayo.
- Salt and garlic powder enhance the overall flavor with a savory note.
- Paprika gives color to the mayo but can be omitted.
- Agave nectar provides a touch of sweetness to balance all of the tanginess. Maple syrup will also work, or you can omit it.

Ingredients
- 16 oz silken tofu
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon apple cider vinegar
- ½ teaspoon salt
- 1 teaspoon Dijon mustard
- ¼ teaspoon paprika optional for color
- ½ teaspoon garlic powder optional
- ½ teaspoon agave nectar or maple syrup optional
Instructions
- Place all the ingredients into a food processor or blender. Drain off the excess water from the silken tofu for a thicker mayo.
- Process or blend for a minute. Scrape down the sides to incorporate all the ingredients.
- Taste test the mayo and add more salt or agave if needed.
