    Vegan Tofu Mayo Recipe

    Vegan Tofu Mayo is creamy and tangy, perfect for making chickpea salad sandwiches or homemade ranch salad dressing. This easy mayonnaise recipe uses silken tofu and is ready in minutes.

    Homemade vegan mayonnaise is a great staple to have on hand!

    You can use it in all your favorite recipes just as you would traditional mayonnaise. 

    I love using it to make soy curl chicken salad, vegan coleslaw, vegan ranch dressing, and vegan bang bang sauce.

    Ingredients

    You will need these simple ingredients to make vegan mayonnaise with tofu:

    Ingredients needed to make vegan tofu mayonnaise with corresponding labels: silken tofu, lemon, olive oil, apple cider vinegar, Dijon mustard, and salt.
    • Silken tofu, or soft tofu, has a smoother texture and lower water content. This creates a creamy, smooth, mayo-like consistency without any egg yolks. Firm tofu is grittier and will not work in this recipe; you will end up with tofu ricotta.
    • Olive oil adds a richness to the mayo but can be omitted if you are oil-free. Canola oil will also work.
    • A combination of lemon juice, apple cider vinegar, and Dijon mustard provides the acidity and tang you would expect from mayo.
    • Salt and garlic powder enhance the overall flavor with a savory note.
    • Paprika gives color to the mayo but can be omitted.
    • Agave nectar provides a touch of sweetness to balance all of the tanginess. Maple syrup will also work, or you can omit it.

    How to Make Tofu Mayo

    Here’s a step-by-step guide to making the best silken tofu mayonnaise:

    1. Place all ingredients into a food processor.

    Tofu mayo fully blended in a food processor, creamy with a mayo-like consistency.

    2. Blend to create a smooth, creamy mayo. It's that easy!

    Vegan Mayo Variations

    Now that you have homemade mayonnaise, have fun customizing it:

    • Sriracha Mayo - add sriracha, lime juice, and extra garlic powder.
    • Spicy Chipotle Mayo - add chopped chipotle peppers in adobo sauce and lime juice.
    • Garlic Mayo - mince fresh garlic cloves and mix them with the mayo.
    • Lemon Dill Mayo - squeeze in extra lemon juice and finely chopped fresh dill.
    • Maple Mustard Mayo - combine mayo with maple Dijon vinaigrette for a sweet, tangy, and creamy mix.

    Storage

    Store homemade vegan tofu mayo in an airtight container, like a mason jar, in the refrigerator. Use within a week for optimal freshness and quality.

    Equipment

    • food processor, blender, or immersion blender

    Ingredients

    • 16 oz silken tofu
    • 2 tablespoons olive oil
    • 2 tablespoons lemon juice
    • 1 tablespoon apple cider vinegar
    • ½ teaspoon salt
    • 1 teaspoon Dijon mustard
    • ¼ teaspoon paprika optional for color
    • ½ teaspoon garlic powder optional
    • ½ teaspoon agave nectar or maple syrup optional

    Instructions

    • Place all the ingredients into a food processor or blender. Drain off the excess water from the silken tofu for a thicker mayo.
    • Process or blend for a minute. Scrape down the sides to incorporate all the ingredients.
    • Taste test the mayo and add more salt or agave if needed.
