No-bake date cookies require just four ingredients: Medjool dates, almond butter, rolled oats, and cocoa powder. These delicious vegan gluten-free chocolate oat cookies are ready in 35 minutes for a quick snack.

Everything leads back to my favorite cocoa date truffles. Their base is Medjool dates and cocoa powder. Simply add oats and almond butter to make them into cookies!
The key to this simple recipe is soaking your dates in hot water. It makes blending them into an extra creamy date paste a breeze. Combined with cocoa and nut butter, you could enjoy this fudgy, chocolate dip with a spoon!
But, to complete the recipe add rolled oats. Then you'll have a moldable cookie dough, making these treats easy to take with you on the go.
Enjoy no-bake chocolate date cookies with fresh fruit like strawberries or blueberries. They're super satisfying after a workout or as a mid-day pick-me-up.
Ingredient Notes
You will need these simple ingredients to make no-bake date cookies:

Medjool dates are the perfect match for pistachio date balls, coconut date bites, and these no-bake cookies. They sweeten the cookies and hold them together.
Almond butter adds creaminess and nuttiness to the cookies. Any nut or seed butter will work! You could also use the crunchy version for added texture. I opted for plain but a chocolate nut butter would be extra delicious.
Oats make up the bulk of the cookie. They turn the date and almond paste into something solid. I recommend using rolled oats as they will hold up the best.
These no-bake cookies wouldn't be complete without cocoa powder. If you want even more chocolate in there you can add chocolate chips or a drizzle of melted chocolate at the end.

How to Make No-Bake Date Cookies

- Soak dates.

Serving Ideas
No-bake Medjool date cookies are delicious as is, but you can customize them to your liking. I always enjoy a drizzle of almond butter or melted chocolate on top (or both!) You could also dip the entire cookie in chocolate and then let it set in the fridge to have a chocolate shell.

Ingredients
- ½ cup pitted Medjool dates 12 dates
- ¼ cup almond butter see notes
- ¾ cup old-fashioned rolled oats
- 2 tablespoons cocoa powder
Directions
- Soak ½ cup pitted Medjool dates in hot water for 5 minutes. If your dates are already quite soft you can skip this step. Increase the amount of dates to 96 grams which is how much the dates should weigh once they have soaked and absorbed more water.
- Remove the dates and reserve the soaking water for later.
- Blend soaked dates and ¼ cup almond butter. Add 2 teaspoons of liquid from soaking dates until it forms a sticky, mostly smooth consistency. It's okay if there are still a few little chunks of date.
- Move the date and almond paste to a separate bowl. Add ¾ cup old-fashioned rolled oats and 2 tablespoons cocoa powder. Mix to form a thick dough. It will be hard to mix. If it still feels wet, add more oats as needed.
- Use a tablespoon sized scooper to portion the no-bake date cookie dough into 9 balls.
- Dip your fingers in the water from soaking dates to flatten the dough into disk to make your "cookies." You can also choose to leave them mounded.
- The no-bake date cookies are ready immediately, but they will be a bit soft. To help them firm up, place them in the fridge for 20 minutes.
- As a final touch, drizzle more almond butter on top. Enjoy!
