The best part of apple pie has to be the warm, tender apple slices coated with cinnamon and sugar. This recipe takes that and combines it with a classic chia seed pudding.
Better yet, you get those cinnamon apples but with a fraction of the effort. Simply microwave the apples with water, cinnamon, and sugar. It makes prep and clean up super easy and shakes up your breakfast routine to feel special for apple season.
If the apple slices weren't enough, the chia pudding base also includes apple cider. From there, the toppings are endless! Whether you add some nuts, yogurt, or granola, this chia pudding with apples hits the spot for a sweet breakfast or snack.

You will need these simple ingredients to make apple pie chia pudding:

All chia puddings follow a simple formula of chia seeds to milk. That being said, with recipes like pumpkin pie chia pudding or this apple chia pudding, you can play around a bit with the ratio. For this one, I lowered the amount of soy milk to include apple cider.
Trader Joe's apple cider is great because it already has extra spices added to it. Regular apple cider will also work, just add a sprinkle of cinnamon or apple pie spice. I prefer cider to apple juice or apple sauce because it packs more flavor.
I almost always use soy milk for chia pudding because it adds a little extra protein. This is especially important as the amount of plant milk is already lower than you would usually get in chia pudding.
You'll also need an apple to really make it taste like apple pie. Use any variety you like, but preferably a firmer apple like Ambrosia, Pink Lady, or Honeycrisp.

How to Make Apple Pie Chia Pudding

- Mix apple chia pudding base. Refrigerate.

- Mix apples with cinnamon, sugar, and water.

- Microwave until soft.

- Top chia pudding with warm apples.
Serving Ideas
The soft apple slices make for a delicious topping as is, but a drizzle of creamy almond butter or a dollop of coconut whipped cream make this sweet breakfast feel extra decadent.
For a bit of crunch, sometimes I'll add maple vanilla granola on top. It's kind of like apple crisp in chia pudding form!
Taking notes from vegan protein chia pudding, adding walnuts, hemp seeds, and sunflower seeds help make this apple chia seed pudding a bit more filling.

Apple Cider Chia Pudding
- 60 grams chia seeds
- 4 ounces soy milk
- 6 ounces apple cider
Cinnamon Apple Slices
- 1 apple
- 1 teaspoon sugar
- ¼ teaspoon cinnamon
- 14 grams water
Additional Toppings
- granola
- walnuts
- almond butter
- hemp seeds
Instructions
Make Apple Cider Chia Pudding
- Mix 60 grams chia seeds, 4 ounces soy milk, and 6 ounces apple cider in a jar.
- Let the chia pudding sit for a couple minutes. Then, mix again. You'll notice that the chia seeds are already starting to gel. Make sure to incorporate any seeds stuck to the bottom or sides of the jar.
- Refrigerate for at least 2 hours, but preferably overnight. The chia seeds need time to fully absorb the milk and cider.
Make Warm Cinnamon Apples
- Core and chop 1 apple into slices or chunks. You do not need to peel it first.
- Mix chopped apple with 1 teaspoon sugar, ¼ teaspoon cinnamon, and 14 grams water in a microwave safe bowl.
- Microwave for 1 minute 45 seconds. Poke the slices with a fork. If they feel soft and easy to pierce, they are ready. Otherwise, continue to heat in 20 second bursts.
Serving
- Divide apple chia pudding between 2 bowls.
- Add warm cinnamon apples on top. Drizzle over the extra cinnamon sugar juices left behind in the bowl.
- Finish with a bit of granola, a drizzle of almond butter, some walnuts, and hemp seeds, if desired.
