Apple pie chia pudding includes spiced apple cider and soft cinnamon apples cooked in the microwave. Prep this easy vegan recipe in less than 10 minutes and wake up to a delicious fall breakfast.
Mix 60 grams chia seeds, 4 ounces soy milk, and 6 ounces apple cider in a jar.
You can also prepare this recipe in 2 jars to keep the servings separate: 30 grams chia seeds, 2 ounces soy milk, and 3 ounces apple cider.
Let the chia pudding sit for a couple minutes. Then, mix again. You'll notice that the chia seeds are already starting to gel. Make sure to incorporate any seeds stuck to the bottom or sides of the jar.
Refrigerate for at least 2 hours, but preferably overnight. The chia seeds need time to fully absorb the milk and cider.
Make Warm Cinnamon Apples
You can prepare the topping the night before and store it in its own container in the refrigerator. Simply reheat it for another 30 to 60 seconds in the microwave or serve it cold. They taste great both ways.
Core and chop 1 apple into slices or chunks. You do not need to peel it first.
Mix chopped apple with 1 teaspoon sugar, ¼ teaspoon cinnamon, and 14 grams water in a microwave safe bowl.
Microwave for 1 minute 45 seconds. Poke the slices with a fork. If they feel soft and easy to pierce, they are ready. Otherwise, continue to heat in 20 second bursts.
Serving
Divide apple chia pudding between 2 bowls.
Add warm cinnamon apples on top. Drizzle over the extra cinnamon sugar juices left behind in the bowl.
Finish with a bit of granola, a drizzle of almond butter, some walnuts, and hemp seeds, if desired.
Notes
Jar Size: To prep the chia pudding you'll need a 12-ounce jar. You'll need closer to 16 or 20 ounces if you want to mix in the apples and store them together. I recommend storing them separately though if you want to reheat the apple slices before serving. If you want to prep each serving of just the pudding base individually, you'll need two 6-ounce jars.Storage: Chia pudding will last in the fridge for about a week. The microwave apples will last a few days, but they are best enjoyed within a day or two. If you prep the apples ahead of time and wish to reheat them, microwave for 20 seconds before adding to the chia pudding.
