Once you make these sweet "churro" chickpeas, you'll want to eat all of them in one sitting. They are that good.
The key to extra crispy roasted chickpeas is in the way you roast them. A short dry roast helps get rid of any moisture that wasn't removed from drying off the chickpeas with a towel.
Then you finish roasting them with oil before adding a homemade mix of cinnamon sugar. The oil get's them extra crispy and ensures the cinnamon coating sticks to the chickpeas.
Whether you enjoy them as a snack or a dessert, cinnamon sugar roasted chickpeas are super delicious. They're great any time of year but especially during holiday season with the addition of ground cinnamon.

You will need these simple ingredients to make cinnamon sugar chickpeas:

Chickpeas are the vessel for delicious coating. You buy them canned or cook them yourself.
You need a neutral oil to roast the chickpeas until they are nice and crunchy. I used canola oil but vegetable oil would also work great.
If you already have some cinnamon sugar mixed up (like from making gluten-free apple cider donuts!), you can use it for this recipe. Otherwise, it's super easy to make with ground cinnamon and granulated white sugar. Coconut sugar would also work. To balance the sweetness, add just a little salt to the mix.

- Rinse and dry chickpeas.

- Dry roast chickpeas.

- Add oil to chickpeas.

- Continue roasting until crispy.

- Toss with cinnamon sugar.

Cinnamon Sugar Chickpeas
Ingredients
- 3 cups chickpeas (2) 15-ounces cans
- 2 tablespoons canola oil
- 2 tablespoons white granulated sugar
- 1 tablespoons ground cinnamon
- ¼ teaspoon salt
Directions
- Preheat the oven to 400°F. Place a clean baking sheet inside to preheat at the same time.
- Rinse and drain 3 cups chickpeas. Place chickpeas on a clean dish towel to dry off any excess water.
- Place the chickpeas directly onto the preheated baking sheet. Dry roast the chickpeas at 400°F for 15 minutes.
- Remove the chickpeas from the oven. Add 2 tablespoons canola oil. Mix to thoroughly coat all of the chickpeas.
- Roast the chickpeas for an additional 25 to 30 minutes, or until they are crispy. Shaking the tray after 15 minutes.
- While the chickpeas bake, whisk together 2 tablespoons white granulated sugar, 1 tablespoons ground cinnamon, and ¼ teaspoon salt in a small bowl.
- Once the chickpeas are roasted, remove them from the oven and sprinkle the cinnamon sugar mixture over top. Shake the baking sheet to coat all sides of the chickpeas.
- Turn off the oven and return the cinnamon sugar coated chickpeas to the oven one last time to cool for 10 minutes as the oven cools down. Leave the door slightly cracked.
