    Vegan French Toast made with chickpea flour is sweet, crispy, and custardy with a subtle eggy flavor. Make this breakfast classic for your Sunday brunch!

    With my love for vegan breakfasts, from fluffy eggless Bisquick pancakes to vegan protein waffles, making French toast was the obvious next step!

    And let me tell you, this recipe will definitely be a regular on my brunch menu! 

    The French toast turns out beautifully crispy and golden on the outside but delightfully light inside. Its sweetness is perfectly balanced, complemented by a subtle hint of "egginess" from the kala namak and chickpea flour.

    Pairing this sweet treat with savory tofu scrambled eggs is a personal favorite of mine!

    Ingredients

    You will need these simple ingredients to make vegan French toast:

    Ingredients with labels: bread, butter, vanilla, milk, maple syrup, chickpea flour, cinnamon, black salt.
    • Italian bread or brioche, challah bread
    • Chickpea flour 
    • Kala namak aka black salt
    • Cinnamon
    • Non-dairy milk like soy milk, almond milk
    • Maple syrup
    • Vanilla Extract
    • Vegan Butter or oil

    French Toast Toppings

    Serve vegan French toast with all your favorite toppings!

    • Maple syrup
    • Mixed berries
    • Chocolate chips
    • Coconut whipped cream
    • Caramelized bananas
    • Powdered sugar

    How to Make French Toast

    Here’s a step-by-step guide to making the best French toast with chickpea flour:

    1. Slice the bread ¾" thick and let it dry out.

    2. Whisk the “eggy” batter until smooth.

    3. Coat both sides of the bread slices in the batter.

    4. Rest the bread slices and preheat a pan with vegan butter.

    5. Cook the toast for 5 minutes.

    6. Flip to cook the other side.

    7. Top with maple syrup and fresh berries!

    Top Tips

    Bread Thickness

    Buy a loaf of bread and cut it into extra-thick slices. A thicker slice can absorb more of the delicious batter, which makes for tastier French toast! 

    Drying or Toasting

    Make French toast with dry bread! Stale bread is great for this recipe, or you can dry it yourself by toasting it. This ensures you won’t have soggy French toast!

    Coating & Resting

    Dip both sides of the bread in the eggy mixture, then let it rest on a plate. Just before cooking, dip it again. This double dip ensures the bread absorbs the mixture without getting soggy. It also created the perfect crust!

    Storage & Reheating

    Vegan French toast is a great make ahead recipe because it stores well in both the friger and freezer!

    Refrigerator: French toast can be stored in an airtight container or zip-lock bag in the fridge for about 3 days. 

    Freezer: Leftover toast can also be frozen for up to 2 months. 

    Reheating: To keep French toast crispy on the outside and moist on the inside, reheat it in the oven or air fryer at 400°F for about 4 minutes on each side.

    Ingredients

    • 1 cup plant-based milk soy milk, almond milk, etc
    • ¼ cup chickpea flour
    • 1 tablespoon maple syrup
    • 2 teaspoons vanilla extract
    • 1 teaspoon cinnamon
    • dash kala namak black salt
    • 8-12 slices Italian bread cut ¾” to 1” thick
    • vegan butter for cooking
    • strawberries, blueberries, blackberries, maple syrup for topping

    Instructions

    • Slice bread into ¾” to 1” thick pieces and allow them to dry out. For a quick dry, lightly toast the bread in a toaster for 1-2 minutes without browning it.
    • Whisk together plant-based milk, chickpea flour, maple syrup, vanilla, cinnamon, and kala namak to create the eggy batter.
    • Transfer the batter to a shallow bowl.
    • Dip each slice of bread into the batter, ensuring both sides are coated, then place them on a separate plate to rest for 5 to 10 minutes.
    • Preheat a large skillet over medium heat and add butter.
    • Once the bread has rested, dip each slice into the batter again for a few seconds to coat both sides.
    • Immediately transfer the bread to the heated skillet.
    • Cook each side for about 5 minutes until golden brown, then flip and cook the other side for an additional 5 minutes.
    • Continue this process until all the bread is toasted, adding more butter between each batch.
    • Serve topped with maple syrup and fresh berries.

    Choosing & Preparing Bread: Select any bread type; thicker slices (¾” to 1”) absorb more batter for tastier French toast. Stale, dry, or lightly toasted bread is best to prevent sogginess, especially with denser bread varieties like vegan brioche or challah.
    Coating & Double Dipping: Dip bread in the eggy mixture, rest to absorb, then double dip for optimal flavor infusion and a perfect crust. This method works particularly well with Italian loaf slices.
    Cooking Tips: Use ample butter for a golden brown crust. Cook in batches, leaving toast undisturbed for optimal cooking. Lower the heat as needed if it seems like the toast is cooking too fast.
    French Toast Batter: I always end up with extra batter. It really depends on the size of the bread loaf. If you have batter left over, store it in the fridge for a few days and make more toast later.
    Storage: Vegan French toast can be stored in an airtight container or zip-lock bag in the refrigerator for about 3 days. Leftover toast can also be frozen for up to 2 months.
