How to Make French Toast
Here’s a step-by-step guide to making the best French toast with chickpea flour:
1. Slice the bread ¾" thick and let it dry out.
2. Whisk the “eggy” batter until smooth.
3. Coat both sides of the bread slices in the batter.
4. Rest the bread slices and preheat a pan with vegan butter.
5. Cook the toast for 5 minutes.
6. Flip to cook the other side.
7. Top with maple syrup and fresh berries!

Bread Thickness
Buy a loaf of bread and cut it into extra-thick slices. A thicker slice can absorb more of the delicious batter, which makes for tastier French toast!
Drying or Toasting
Make French toast with dry bread! Stale bread is great for this recipe, or you can dry it yourself by toasting it. This ensures you won’t have soggy French toast!
Coating & Resting
Dip both sides of the bread in the eggy mixture, then let it rest on a plate. Just before cooking, dip it again. This double dip ensures the bread absorbs the mixture without getting soggy. It also created the perfect crust!

Vegan French Toast
Ingredients
- 1 cup plant-based milk soy milk, almond milk, etc
- ¼ cup chickpea flour
- 1 tablespoon maple syrup
- 2 teaspoons vanilla extract
- 1 teaspoon cinnamon
- dash kala namak black salt
- 8-12 slices Italian bread cut ¾” to 1” thick
- vegan butter for cooking
- strawberries, blueberries, blackberries, maple syrup for topping
Instructions
- Slice bread into ¾” to 1” thick pieces and allow them to dry out. For a quick dry, lightly toast the bread in a toaster for 1-2 minutes without browning it.
- Whisk together plant-based milk, chickpea flour, maple syrup, vanilla, cinnamon, and kala namak to create the eggy batter.
- Transfer the batter to a shallow bowl.
- Dip each slice of bread into the batter, ensuring both sides are coated, then place them on a separate plate to rest for 5 to 10 minutes.
- Preheat a large skillet over medium heat and add butter.
- Once the bread has rested, dip each slice into the batter again for a few seconds to coat both sides.
- Immediately transfer the bread to the heated skillet.
- Cook each side for about 5 minutes until golden brown, then flip and cook the other side for an additional 5 minutes.
- Continue this process until all the bread is toasted, adding more butter between each batch.
- Serve topped with maple syrup and fresh berries.
