1cupall-purpose flouror gluten-free all purpose flour
⅓cuppea protein powder vanilla flavored
½teaspoonsalt
1tablespoonsugar
1tablespoonbaking powder
1 ½cupsunsweetened soy milkor other plant-based milk
2teaspoonsapple cider vinegar
2tablespoonsolive oil plus more for brushing the waffle iron
1teaspoonvanilla extract
Instructions
Place all dry ingredients in a medium-sized bowl.
Whisk dry ingredients until combined.
Place the wet ingredients into the bowl with the dry ingredients.
Whisk until a smooth batter forms. Scrape the bottom and sides of the bowl to ensure all the dry ingredients are incorporated.
Heat a mini waffle maker and brush with olive oil.
Scoop a ¼ cup of batter into the waffle maker.
Cook for about 4 minutes or until the waffle is golden brown.
