Vegan black bean tortilla soup made with tomato, corn, celery, and green chile is packed full of flavor. Garnished with lots of tortilla chips and cilantro, this comforting soup is ready in 25 minutes for an easy weeknight meal.
Heat a soup pot over high heat. Add 1 tablespoon olive oil to the pot.
Add 1 medium onion, 4 cloves garlic, and 2 stalks celery. Cook until softened and slightly browned.
Add ½ teaspoon salt, 1 teaspoon chili powder, 1 ½ teaspoons ground cumin, and 1 ½ teaspoons dried oregano. Cook until fragrant about 30 to 60 seconds.
Drain and rinse your black beans!
Add 4 cups vegetable broth, 3 cups black beans, 15 ounces diced tomatoes, 1 cup corn kernels, and 4 ounces diced green chiles.
Bring everything to a boil, then reduce to a simmer. Let the soup simmer for about 10 minutes and then stir in 2 tablespoons lemon juice. Add salt and pepper to taste.
Crush some tortilla chips on top and serve a few extra on the side for dipping. Garnish with cilantro.
