    Maple Cashew Energy Bites

    Maple Cashew Energy Bites are the perfect snack to have on hand when you need a pick-me-up. They are filled with creamy cashew butter, maple syrup, oats, and chocolate chips.

    No bake energy balls like these or pumpkin protein balls are such an easy snack to make ahead. 

    They are great for before or after a workout, on road trips, or as a little treat!

    This vegan maple cashew variation keeps the flavors simple but can easily be customized to fit different needs like in this nut-free energy balls recipe.

    Ingredients

    You will need these simple ingredients to make maple cashew energy bites:

    • Rolled oats 
    • Oat flour
    • Cashew butter
    • Maple syrup
    • Flax seeds
    • Chocolate chips
    • Vanilla

    Here’s a step-by-step guide to making the best cashew energy balls:

    1. Place all the ingredients in a bowl.

    1. Mix with a spoon to form a dough.

    1. Use a scooper to portion the energy bites.

    1. Use your hands to compact them into balls.

    You can eat your energy bites right away or refrigerate them to help them firm up a bite more.

    Another way to enjoy them is to make them into cookies!

    Flatten your energy balls into a cookie shape and air fry at 350°F for 5 to 7 minutes to make “cookies.” The chocolate gets all melty and the exterior will be nice and crispy.

    Energy Bite Variaitons

    Here are a few ways to customize your energy bites:

    • Swap the flaxseeds for chia seeds, finely chopped cashews, or popped quinoa for extra crunch.
    • Swap the chocolate chips with raisins or dried cranberries, or leave them out completely.
    • Swap the cashew butter for your favorite nut butter or seed butter like almond butter, tahini, or sunflower butter.

    Storage

    Store maple cashew energy bites in an airtight container for about a week in the refrigerator.

    For longer storage, place in a freezer safe bag and freeze for up to 2 months.
