Summer Fruit Pancakes are fluffy and full of flavor from peaches or nectarines. This vegan recipe is easy to customize with any summer fruit!
Nothing says summertime like these fluffy pancakes with fresh fruit from the farmer’s market!
Just add a dollop of coconut whipped cream and some chopped walnuts for an extra decadent breakfast treat.
I also love this recipe for using up slightly soft fruit, like the nectarines I had on hand. Because once you caramelize the fruit, it adds even more flavor!

- Fruit - Use whatever you have on hand! Peaches and nectarines are in season right now and taste amazing when caramelized on top of pancakes. Summer berries like blueberries or raspberries are also delicious. You could also do a combination of multiple fruits (peaches and blueberries are a popular combo).

How to Make Pancakes with Fruit
Here’s a step-by-step guide to making the best peach pancakes:
- Step 1: Add all the ingredients for the pancake batter (except for the fruit) to a bowl and mix to combine. Add about half of your chopped fruit to the batter and mix again.
- Step 2: Add about ¼ cup of pancake batter to a pan over medium heat. Place more fruit on top of the pancake and let it cook for about 2 to 3 minutes.
- Step 3: Flip the pancake and cook for another 1 to 2 minutes or until the pancake is golden and the fruit has caramelized.
- Step 4: Repeat with the remaining pancake batter and fruit. Depending on the size of your pan you can cook up to 3 pancakes at once.
Top Tip
My top tip for fruit pancakes is to include chopped fruit both inside the batter and on the top. Once they're done cooking, you could even add some fresh fruit as a topping!
Having the fruit within the batter helps distribute the fruit flavor throughout the entire pancake. Adding the fruit on top allows it to caramelize once you flip the pancake.
Make sure not to overload the pancake with fruit! You want it in an even layer, and you may need to tap in the fruit slightly with a fork to ensure it doesn’t fly off when you flip the pancakes.

Store leftover pancakes in an airtight container in the refrigerator for 3 to 5 days.
You can reheat them in the microwave for about 30 seconds or crisp them up in the oven or air fryer at 350°F for about 5 minutes.

Summer Fruit Pancakes
Ingredients
- ¾ cup all purpose flour or gluten-free flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 ½ teaspoons white sugar or other sweetener
- ⅔ cup plant-based milk any type will work, I used soy milk
- 1 teaspoon lemon juice or apple cider vinegar, white vinegar
- 1 teaspoon vanilla
- ½ teaspoon cinnamon
- 1 tablespoon canola oil or melted vegan butter
- ¾-1 cup peaches, nectarines, or other summer fruit chopped
- 1 tablespoon canola oil for cooking
Instructions
- Add all the ingredients for the pancake batter, except the chopped fruit, to a medium-sized bowl and mix to combine.
- Add about half of the chopped fruit to the batter and mix again.
- Lightly oil a frying pan over medium heat.
- Add about ¼ cup of pancake batter to the pan.
- Place more fruit on top of the pancake in an even layer.
- Allow the pancake to cook for about 2 to 3 minutes.
- Flip the pancake and cook for another 1 to 2 minutes, or until it is golden and the fruit has caramelized.
- Repeat with the remaining pancake batter and fruit. Depending on the size of your pan, you can cook up to 3 pancakes at once.
