    You probably already guessed that I am a huge fan of breakfast foods, with pancakes being one of my favorites!

    And I love using the batter for vegan Bisquick pancakes or oatmeal blender pancakes to make an extra festive vegan breakfast during the holidays.

    It starts with a couple of round and oval-shaped pancakes, but when you put them all together, you have a cute bunny butt! 

    Add a few sliced strawberries or bananas and a dollop of coconut whipped cream, and get ready to hop into the holiday spirit with these charming pancakes!

    Ingredients to Make Bunny Pancakes

    You can use your favorite pancake recipe to make Easter bunny pancakes!

    I love to use my eggless Bisquick pancake recipe because it is so quick and easy to whip together.

    Oatmeal blender pancakes also work great, but I recommend thinning the batter out a bit with extra milk.

    Ingredients for Bisquick Pancakes

    Ingredients needed to make bunny pancakes with corresponding labels: vanilla, plant milk, melted butter, brown sugar, Bisquick, and baking powder.
    • Bisquick Original Pancake & Baking Mix or Gluten-Free Bisquick Mix allows these Easter pancakes to come together in no time!
    • Brown Sugar helps achieve a perfectly golden brown bunny pancake.
    • Baking Powder makes these pancakes super fluffy.
    • Dairy-Free Milk forms the batter; use your favorite! I always use soy milk because of its high protein content. 
    • Pure Vanilla Extract gives an extra special touch!
    • Melted Vegan Butter or Oil adds moisture to the pancakes.

    How to Make Bunny Pancakes

    Here’s a step-by-step guide to making the best easter bunny pancakes:

    Step by step directions for making the pancakes: making large pancake; making slightly smaller pancake; making paws; making ears; making the tail; making the toes.
    1. Use a scant ½ cup to make one large round pancake; this will be the bunny’s body or “butt.”
    2. Use a scant ⅓ cup to make a slightly smaller round pancake; this will be the head of the bunny.
    3. Use a scant ¼ cup to make an oval shape. Repeat to make the two bunny paws.
    4. Use a scant ¼ cup to make an en extra-long oval shape. Repeat to make the two bunny ears.
    5. Use a teaspoon to make the bunny tail. Repeat two more times to make the bunny’s paw pads.
    6. Use a spoon to drip pancake batter into tiny little dots in the pan, almost like you’re making pancake cereal! These will be the bunny’s toes. I like to make extra to have around the bunny as little eggs.

    Assembling the Bunny Shaped Pancake:

    1. Place the bunny ears at the top of your plate.
    2. Lay the bunny's head over the top of the ears.
    3. Then, lay the bunny's body to slightly overlap the head.
    4. Next, place the paws to overlap the body.
    5. Finish off the bunny with the paw pads, toes, and the tail.
    6. For a final touch, sprinkle shredded coconut on top of the bunny and cover the tail.

    Bunny Pancakes Variations

    To make just the bunny butt: 

    • Skip making the head and the ears.

    To make just the bunny face:

    • Skip making the body, paws, and tail.
    • Add chocolate chip or blueberry for the eyes and nose.
    • Add whiskers with tiny little pancake strips or chopped apple.

    Ways to Decorate Bunny Pancakes

    I made this bunny pancake entirely out of pancakes, but there are a lot of fun ways to decorate it besides pancakes!

    • Bunny Tail - Use a sliced strawberry, banana, or a dollop of coconut whipped cream.
    • Bunny Paws - Use a sliced strawberry or banana for the larger paw pad and chocolate chips or raisins for the toes.
    • Bunny Ears - Use a banana sliced in half for the ears or some tofu bacon.

    • 2 cups Original Bisquick Pancake & Baking Mix or Gluten-Free Bisquick Mix

    Instructions

    Make the Pancake Batter

    • Mix together all the ingredients until the batter is smooth with a few lumps.
    • Heat a non-stick skillet or pancake griddle over medium heat and lightly grease it with oil.

    Making the Pancakes
